
Exploring the Future of Sensory Science at the V Congreso de la Asociación Española de Profesionales del Análisis Sensorial from 19-21 of June 2023. We were delighted with our participation in AEPAS Conference in Girona. This event gathered experts, researchers, and professionals in sensory science to discuss the latest advancements, methodologies, and challenges shaping the future of this discipline. At EyeQuestion, we eagerly embrace cutting-edge techniques like immersive data collection and AI-driven analysis to revolutionize consumer studies and gain a deeper understanding of preferences and behaviours.


The congress commenced with enlightening presentations on various aspects of sensory and consumer analysis. We had the privilege of exploring topics such as characterizing food products through classic and emerging techniques, implicit and explicit measures for consumer research, product development, creating new gastronomic experiences, and the intersection of sustainability and sensory sciences.
A notable presentation by Charlotte Sinding, a neuroscience researcher, focused on “Flavour Perception and Odour-Induced Taste Enhancement: Brain Mechanisms.” Her research shed light on the impact of odour-induced taste enhancement on salty and sweet solutions, as well as the differences observed in complex beverages compared to water-based solutions. This knowledge deepens our understanding of the intricate relationship between flavour perception and odour-induced taste enhancement.

Another thought-provoking presentation by Liisa Lahteenmaki from Aarhus University discussed the role of consumers in building a sustainable food system, emphasizing the importance of collaboration for a sustainable future. Alícia Foundation presented the potential of combining culinary expertise, sustainable project development, and scientific rigor to explore complex culinary combinations and promote sustainable practices.

Throughout the congress, the growing interest in AI and its application in sensory and consumer analysis became evident. Talks on AI-powered technologies for remark labelling and sentiment analysis demonstrated their potential in understanding consumer behaviour and preferences. Additionally, the integration of eye-tracking technology and immersive techniques like virtual reality (VR) presented exciting opportunities to study consumer behaviour in immersive environments, providing new dimensions for understanding preferences, motivations, and decision-making processes.
